Van Smith is clearly serious about food, and he has a number of insights into how to cook cicadas. “Tenerals”, the cicadas who have just emerged, “make for the best eating.” After a few hours, although not as good, they are crunchier, but still edible. You can dry roast cicadas (at 275 degrees) and eat them like nuts. Smith deep fried some and used others in a “delicious” omelette.
